Our client is a family run craft business with over 30 years brewing expertise with plans for major growth over the coming years, including development of existing sites and opening of new venues. To date they have four venues and with outlined growth plans. Across all their sites they only produce & sell fresh, homemade food, which is made from scratch using the finest locally sourced ingredients. They are currently recruiting for a Chef De Partie and Sous Chef to join their team in their thriving, cosy Gastro pub, located in Little Eaton, the site is also to undergo a major refurbishment and extension in the coming months, so this is a hugely exciting time to join the team. Responsibilities & Duties: - Assist in the day to day running of the kitchen - Embody the standards of the business at all times - Train and develop junior members of the team - Help in the creation of new and tasty dishes for the menus - Work alongside the head chef to in order to create a smooth and happy kitchen - Help develop new menus and create spec sheets for new dishes fully costed to achieve optimum GP - Sous Chef to take control in the Head Chefs absence - Communicate effectively with other departments - Maintain a 5 star hygiene rating Candidate Requirements: - A food hygiene certificate level 2 (level 3 would be an advantage) - Experience in menu design - Ability to work under pressure - Ability to manage and organise your daily tasks - If Sous Chef (either experienced Sous Chef or a strong Chef De Partie looking to further their career) - If Chef de Partie (experienced CDP or an experienced Commis looking to further their career) - Passionate about food and a vision to create new and exciting dishes - A Knowledge of food costings, up to date with recent COSHH and HACCP - Willingness to develop and grow with the business Due to the nature of the business the candidate must be flexible in terms of hours which will include weekend work. Salary: - Sous Chef £16,000 - £18,000 - Chef de Partie £14,000 - £16,000 Both are depending on experience plus a profit sharing bonus scheme and tips.
